The Banasura highland pepper in the FINEST FOOD AGE PEPPER COLLECTION comes from the Wayanad district of Kerala on India’s Malabar Coast: it is grown in the area around the Banasura Sagar Dam, the largest earthen dam in India. The Malarbar Coast, also known as the Pepper Coast, is the homeland of pepper. The processes involved in growing, Harvesting and drying the peppercorns have been perfected there over centuries. This long tradition yields pepper of a quality unsurpassed elsewhere.

This very special pepper is grown under ideal climatic conditions in a magnificent landscape of outstanding natural beauty. Botanically the Banasura highland pepper is a real pepper of the species Piper nigrum, that subgroup of the Piperaceae that we know as pepper. The Banasura pepper plant has been bred from other premium varieties, resulting in a pepper that is fundamentally different from those of other regions. The plants are particularly tall, growing to a height of about twelve metres. This makes Harvesting a difficult and somewhat hazardous task.

The Banasura pepper is not picked until the berries are completely ripe. As a late-harvest pepper, the Banasura has time to ripen and develop its intense flavour. As a result, the pepper berries are particularly big and much more flavoursome than other pepper varieties.
After drying, the farmers very carefully select the largest and best-looking pepper berries. The quantity that comes onto the market each year is very small, amounting to no more than about two tonnes. High-quality Banasura pepper is therefore a distinct rarity!
